Cleanse: Week One

Posted by Elizabeth Mollo on Wed, Jun 20, 2012 at 10:40 AM

I survived the first week of the cleanse! Plenty of temptation was thrown at me, especially during PDX Pride, but I managed to stay strong and stick with it. The cleanse is easier than I thought in some ways, and harder than I thought in others. Easier because I thought I was going to be tired and feel awful, harder because it takes a lot of time to plan, prepare, cook, and clean-up after every meal. Not to mention scouring the internet for recipes as to not become bored. Here are the best ones I found: (click on the picture to go to the recipe)

Eggplant Calamari with Sweet Potato Chips and Guacamole

Lentil and Sweet Potato Burger (I amended the recipe a bit to make it cleanse friendly.)

Asparagus Fries, Sweet Potato, Beets (Yes, I love sweet potatoes.)

For the asparagus fries you just drizzle olive oil on the asparagus, broil until crispy, and season. Super easy, and I will be using this recipe, and a lot of the others, after the cleanse is done.

All in all I feel great, better than I have in a long time actually. My mind is really clear and I have tons of energy. I tend to crash pretty hard at night, which is good, because usually I would stay up until all hours doing God knows what (usually with a drink.) I will post an update about week two next week, but if you want to keep track of my daily progress click here.
